French toast with a healthy twist

- CHEF SUNÉ NIEMAND WITH THE DEPARTMENT OF NUTRITION & DIETETICS - 

 For 3 servings you will need: 

3 slices of bread (preferably brown or whole grain bread)

2 eggs

 

METHOD:

Beat the eggs well.  Add to a deep bowl that is wide enough for a slice of bread to fit.

Soak each slice of  bread in the egg.

Heat a little bit of oil in a pan (be careful that it does not get too hot).

Fry the dipped bread in the heated oil over medium heat until lightly brown on one side.

Flip over and fry until lightly brown on the other side as well.

Add any of the following toppings:

  • Chakalaka chicken liver filling
  • Lentil filling
  • Pilchard filling
  • Sliced tomato

TIP

Eat dry beans, split peas, lentils, and soya regularly.  This can be canned, eaten as soya mince or cooked from scratch. 

In addition, they are often part of very affordable soup mixes in supermarkets and are extremely healthy sources of protein that can replace meat, chicken or fish in a meal.
